Hi fellow munchers...

As per the title, I’ve been busy (ok maybe slightly lazy) I haven't put up a post since I started.

As promised here is the recipe for my Lemon & Passionfruit Cupcakes/Cake. I have probably made this cake at least 20 times over the last 2 months, it’s a never fail and everybody loves it. It’s moist and tasty and just so damn good! Go ahead try it...

Makes approx, 12 cupcakes or a Regular Round Cake

Lemon and passionfruit cake
150 grams of unsalted butter
200 ml Sugar
1/2 teaspoon of Vanilla Extract
2 tablespoons of Yoghurt (any yoghurt sweet or natural)
Zest of 1 lemon
Juice of 1/2 a lemon
1 fresh passionfruit ( if making the buttercream, I reserve 1/2 for the buttercream)
3 Eggs
1 & 1/4 cups of Self Raising Flour

Lemon Buttercream (which is optional)
50 grams of unsalted butter
Juice of 1/2 a lemon1/2 a passionfruit
1 cup of soft icing mixture (approx)
1 tablespoon of boiled water a dash of vanilla extract

Method

-Preheat oven to 160 or 180 degrees
-With an eclectic mixer beat butter and sugar until pale and fluffy
-Add one egg at a time beating in well
-Add Vanilla Extract, Lemon Zest, Lemon Juice & Yoghurt beat in well
-Sift half the flour into the mixture , mix and then follow with the second half of the flour
-Add passionfruit pulp, and combine with a spoon.

If making a cake bake for about 30mins in a 180 degree oven
If making cupcakes bake for about 15mins in a 160 degree oven

Method- Buttercream

-Whip butter until pale and almost white
-Gradually add the icing sugar, vanilla extract, if the mixture is grainy in appearance add the hot water
-There are no exact measurement for how much icing, so just continue to add the icing until it is sweet enough for you
-Lastly add the passionfruit pulp and fold through.

You will have the excuse the odd measurements, I initially made up the recipe after my friend gave me a brief recipe of her lemon cupcakes. So originally I just used my wine glass to measure everything but after being asked for the recipe numerous times, I have since measured out the quantities to the best of my abilities without owning a scale.

I feel like breaking into song and singing that song by Belle Perez "hello world, this is me...life should be fun for everyone"!

So this is me.... This is a whole new learning experience, I love cooking, I hate writing so excuse the lack of correct grammar and punctuation. I am learning how to use my Hectic camera a Canon super dooper Hectic camera that I bought off my brother in-law, at the moment all I know is that i hit a button and it makes a cool professional camera sound *chick chick*. I am however good at taking pictures with my Mobile please see the evidence in the picture above ( okay so I know I have some lighting issues, but hey 3.2 mega pixel I think I did ok ahahha) my Lemon lime & Passionfruit cupcakes (love this recipe, I will post the recipe as my second post).

I hope I stay motivated and keep up my blog as I have always wanted to document my Mum's recipes the beautiful dishes that my Mum churns out, so they are captured and are available to our future generations .

I follow a lot of blogs and I am in awe of the spirit of bloggers who let us into their worlds, share their recipes and help one another, hats off to all bloggers out there.
